Italian Chicken & Noodles Recipe Share

What is for dinner?  It is so easy to get in a rut and end up cooking the same thing over and over again.  When I saw the recipe party over at Remodelaholic, I thought it would be a great way to try something new.  I am sharing one of our family favorites... Italian Chicken & Noodles.  It is very easy to make, you just need a crock pot or slow cooker... depending on where you are from. 

I have been making this for so long, I don't remember where I orginally found the recipe. However, I have changed it to fit our tastes, so it is not in it's original form.  Here is what you will need: 

Boneless skinless chicken breasts (I use 3, if you have a larger family use a few more)
1 cup of white wine* (nothing special, just what you get at the grocery store).
1 8oz pkg cream cheese
1 can cream of chicken soup (or cream of mushroom, whatever you have)
1 envelope of Italian salad dressing mix ( I sometimes use other seasonings... you can really adapt this to whatever you like)
1 pkg noodles (We like the no yolk egg noodles, but I have also used just about every other type of noodle... elbo, spiral, spagetti, etc... whatever I hapen to have on hand)

Place the chicken breasts, wine and Italian mix in the crock pot and cook on low for about 4 hours or until chicken is done.  Using two forks, shred the chicken (I do this right in the crock pot), add the cream cheese and soup and let cook while you cook the noodles according to pkg directions (leave juices in crock pot).  I like to cook the noodles just until not quite done (al dente?) and then add them to the crock pot.  This way they soak up some of the juice and have more flavor.  The cream cheese should be soft by the time the noodles are finished.  Stir the chicken, cream cheese, soup mixture and add the cooked noodles (if too thick, add more wine*).  Let cook about 30 minutes until noodles are good and done.  Enjoy!

*If you don't do wine, you can substitute chicken stock.  I do this when I am out of wine, it is still very good.

Ready For Spring

I am so ready for Spring and warm weather.  When we moved from Tulsa to Midland I had to leave all my house plants with my parents.  They will be bringing them to me at the end of April, but I really wanted some greenery in my house NOW.

Birthday Card

This is a birthday card for a little girl turning one, a custom order from my Etsy shop.   I used my sewing machine on the front and inside of the card.  The cupcake is paper pieced together and attached with pop dots, and the "sprinkles" on the icing are little metal accents.  The inside of the card has a poem written by the little girls parents.

Note Cards & Digital Stamps

I have been making a lot of these little note cards lately.  The first three sets I made using some rub-on's I have had sitting around for way too long.  I thought they would be great for graduations, promotions, engagements, etc. 













































The next three sets I created with digital stamps (my own design).  I like using digital stamps because I can change the size or color to fit my project and they don't take up any space in my studio.
